Quang Ninh is a popular tourist destination all over the world because of its spectacular landscape, rich culture and hospitable people. But there’s another thing the place is proud of that many tourists are unaware of, and that is its food, specifically a local dish that is made only in the Northern part of the province, in Ha Long.
Sai Sung, also known as Sa Sung or Moi Xao, is a one-of-a-kind seafood dish made out of sea peanut worms which are abundant in the locality. In fact, the food was named after Sai Sung Sea, adjacent to the coastline of Van Hai Island Province, especially the districts of Minh Chau or Quan Lan. The worms can be found just along the seashore, but have to be quickly dug out when the tide rolls out. They have to be dug out with bare hands by a skilled and experienced digger in order to preserve its natural state and make them suitable for cooking.
The dish can be prepared in two ways. The first is by frying the worms with fresh garlic to produce a buttery, delicious taste. The other way is by roasting. The worms are initially dried after which it creates a savoury, yellowish colour with just the right amount of salty flavour. For those who want a kick in their food, it can be dipped in chilli sauce. Pairing it with fresh lettuce and ice cold beer is the perfect final touch to the unconventional but must-try meal that is uniquely Quang Ninh.
